
Sometimes it is not easy to evaluate the taste of an intoxicating drink, but it is even more difficult to track the quality of production. This article presents the official beer indicators, as well as folk methods for determining quality.
So, today in Ukraine there are 3 criteria for beer – color, acidity, carbon dioxide content and stability. It is clear that not all criteria can be realistically assessed by the average beer lover. Therefore, we decided to make the task easier and highlighted only 2 parameters that everyone can assess.
Beer color
Beer is divided into dark and light. Although in fact each brand of beer has its own shade. The European Brewers Convention (EBC) uses special stereotypes to assess the color of beer – 9 glass discs of different shades. Our experts dilute iodine in water until they get a shade closest to the color of beer, and determine the color by the specific gravity of iodine. In the concept of «color», it is not so much the characteristic shade that is important as the permeability, presence or unavailability of the color scale. The strictest requirements are imposed on light beer. Its color scale must be clean, transparent, golden. It cannot have a reddish, brown or greenish tint. And also – it must shine. And dark beer can not shine, be brown and not even be transparent. And at the same time remain beer. Although no professional can determine by color whether it corresponds.
Beer foam
Foam is the calling card of beer. You can determine the quality of the drink by it. If the foam is thin, with a lot of bubbles, red, and unattractive in appearance, then this beer is not first-class. The foam of a good beer is compact and monolithic, without bubbles and absolutely snow-white. Pour the beer into a rather large glass or glass. Excellent beer should have a foam height of at least 4 cm and keep it for at least 4 minutes. If the foam is lower or disappears without a trace in a shorter period of time, it means that it is not absolutely excellent. Try blowing on the foam a little. If the foam disappears, it means that the beer is bad, if it «bends», it means that it is not bad. And one more tip. Place a coin on top of the foam layer. If it does not sink, this is another sign of good quality. The foam should also «stick» to the walls. If after you drink beer, there are traces of foam on the walls of the glass, everything is fine - you drank beer. If there are no traces, then you should think about whether it is really real beer.
